Nutrientrich blog turned me onto a short spot that T. Colin Campbell did on Larry King live. The piece talks about meat safety and the deadly infections that have become common place in modern meat production. Like all mass media, they never go so far as to admit that meat contamination is an entirely preventable problem.
If we slaughtered animals with clean and human slaughter methods and raised them on farms, then most of the contamination would be prevented. Chickens in the U.S. today, are almost guaranteed to be infected with salmonella. The sad fact is that in your Grand mother’s time, this simply wasn’t true. Today, unethical, unsafe, and nearly unregulated concentrated animal farming breeds diseases that are passed on to humans when the animals are eaten.
