
I suspect most of us haven’t eaten weeds. Dandelion greens are sometimes sold in grocery stores and can be used to make a nice salad. Yes, dandelions are the weeds most people poison in their yards. And, yes, they are those little yellow flowers we used to make necklaces out of as children. Weeds can be a wonderful source of vitamins and minerals, and the price can’t be any better. Anyone who says they are too poor to eat well should start eating dandelions! Several websites wrote that dandelion greens are only good in early spring and late fall, but I ate some raw in mid-August and they are yummy.
